Discovering Les Caves Bailly Lapierre – A Hidden Gem of Burgundy

Nestled in the charming village of Bailly, in the Auxerrois region, lies the birthplace of the AOC Crémant de Bourgogne. Since 1972, Les Caves Bailly Lapierre has been producing stunning sparkling wines deep within an underground stone quarry that provides unique natural conditions: cool temperatures, soft light, and timeless atmosphere.

This place is not just about wine, it is about heritage and craft. The cellar brings together 430 winegrowers whose noble hand-harvested grapes are vinified and patiently aged. The result? Crémants and still wines with intense character and beautifully mineral freshness.


Crémant de Bourgogne is made using the traditional method, with a second fermentation in the bottle, the same technique used in Champagne. Down in the underground vaults, the cellar master oversees this remarkable transformation, watching the sparkle come to life.

Although the Crémants are world-renowned, Bailly Lapierre also produces still wines from three Burgundy appellations: Chitry, Côtes d’Auxerre, and Saint-Bris.
